    Is this normal?

    Sampled my beer after it had been bottled a couple weeks--fantastic: complex, palatable, slight hints of fruit. 2 months later: Dry as toast, bitter, tastes rather awful. Any ideas what I should do? The recent bottles have been refrigerated for some time. I don't know if that changes...

    Live Yeast

    It will likely be more bitter. Drink too much of it, and you'll get the runs. Aside from a sore posterior, it won't hurt you.

    Looks like I will be making a run to the liquor store tonight. Any uses for cheap liquor that ain't fit to drink? It's not high enough proof to use as a solvent (I don't think).

    Beer Drinking Dogs

    My male pup loves beer. He even knows what to look for in a container--ignores Coke, but recognizes Budweiser. Figure that out. The female has only minor interest. Go figure.

    Cracked open a couple bottles from my first batch of homebrew. A bit drier than I would have liked, but definitely more refined than Budweiser. I think I have an addictive hobby now.

    which yeast?

    I would only caution against two: lager yeast and "turbo" yeast. The first requires chilling, the second tends to give funky flavors.

    Dunno if it has been mentioned or not, but homebrewheaven.com is a lot more reasonable than the B&M shops, and does free shipping on orders over $200 (I think).

    What's your dirty secret?

    I can't stomach most commercial beers anymore. All the light beers taste like they were mopped up from the floor of the mens room after happy hour. Budweiser is the only macro-brew I allow in the house. Still fond of Goose Island every now and again.

    I need help.....lots of it

    Would I be better off to use leaf or pellets? I'm using 6.5 gallon carboys with a 5 gallon batch, so I shouldn't think there would be a risk of clogging the air-lock.

    Sure. I was going more for a Guiness color than flavor. I'd like to keep it a little on the malty side. Seeing as how I can only get a temperature down to 64 degrees, ale is what I have to work with.

    I've got a can of Munton's Dark Malt (3.3 lbs.?) and about 2 pounds of dark malt extract in there now. I was aiming for a Guiness/Amber Bock style of beer.

    Will it hurt the beer if I add hopps late? Does it have to be in primary or would secondary suffice?
