Don't worry about converting DC back to AC. That's a lost cause. What you want is a 120V/24V transformer, not a power supply. How many valves are you trying to power with the transformer? That will dictate how large of a transformer you need.

I put a cover over my Chugger pumps and that was enough to cause them to overheat. I contacted Chugger and Mike said to remove the cover because the motors can handle a little splashing. I'm still a little uncomfortable with this so I might try putting some vent holes in the covers.

Give it some time. I did an all citra IPA that had a very distinct onion flavor at first. This faded over time and it ended up being very good. Is the off flavor you're tasting an onion flavor by chance?
