yes Labeling is questionable. The only way to know for sure is try it since most labels I have seen dont differentiate between simple pasteurized, gently pasteurized and ultra pasteurized.

go to Pick or Sendicks and try using Oberwiesse milk (1/2 gallon glass jug). . . works great for me

my base is 2:1 dark brown sugar:kosher salt then I add to it from there depending what I feel like and what I have on hand.
