it wont cool off too much in the time it takes to set up, at least I have yet to have a problem with it and I am in Wisconsin and have a window right at my sink/work area
how do you get your moz hard? hell normally my complaint is it's too gooey.
Normally when I make mine I dont get a really good "stretch" until the 3rd, 4th, maybe 5th time through the nuker (depending if I am making 1 or 2 pounds)

What I normally do is add all my concentrate (normally 10 cans) then top off to 5 gallons with straight juice. ( I usually end up about 9% ABV) Then when I back sweeten I add 3 more cans.
when you heat it to stretch it are you getting it up to the required 135?
Just made a batch this week with Oberwiess milk I picked up at Sendicks on 80th and Layton (ish) with no problem
the satisfaction of enjoying the fruits of your labor? BTW you have to remember cheese is the solids from the milk. It's like taking the powder and sugar out of a pitcher of koolaid.
not waxing tonight just getting ready to dip next time. My first time waxing I use a brush and while I got the job done it was messy, painful and not 100% covered (pin holes >.< )

In the middle of melting 3 batches of 6lbs of cheese wax and just want to pass things on along as I learn them so expect edits . . .
1. This shyte is sticky and the plastic has tons of static . . . tossing it into the freezer for a bit helps you get the plastic off
2. Frozen wax is hard as...
