    For your first batch you should try a simple thing what I call "mead" It's just honey, water and yeast together in fermentation. Just concentrate on your SG if you don't want it too sweet or too dry.

    Why don't you put your hydrometer in other liquid to check the differrent? In case your hydro is broken it might show the same gravity in other differrent liquid which it not sweet like your honey.

    I was used a little peice of linen cloth just tie it with the mouth of the tube. This can avoid the residue in your mead from the primary but that is not mean the alive yeast will be left in your primary.

    A confused newbies first batch

    My blackberry melomel also took 6 days at primary fermentation and it's surprised me because it taste good and also clear. Actually the yeast I used is good for AVB 18%. I think there is not enough sugar for them so they stop eating, that's just my opinion :D
