    Wheat Extract to All Grain?

By the way, I'm brewing a Schneider Weiss clone this weekend. Here is the recipe if you're interested. This is by far my favorite wheat beer, but I haven't brewed this yet: Amount Item Type % or IBU 6.00 lb Wheat Malt, Ger (2.0 SRM) Grain 51.61 % 5.50 lb Pilsner (2 Row) Ger (2.0 SRM) Grain...

    Wheat Extract to All Grain?

The rice hulls would not have affected your efficiency. CaraWheat is a wheat malt that has already been converted (starch to sugar) via kilning and doesn't even really need mashing, just steeping. Similar to Crystal, Carafa, CaraMunich, etc... Unfortunately, the sugars present in CaraWheat are...

The Raging B*tch and El Diablo

Yeah, I'll tell ya. It came out really good with the Abbey Ale yeast. I've just read that the Ardennes has more of the bubble gum affect that I think is pretty signature of this brew. So funny, I opened up my email while I was sipping this tenacious brew! I may just stick with this yeast! It's...

The Raging B*tch and El Diablo

Just realized that credit for my recipe has to go to platypotamus' previously posted link (and platypotamus himself, I believe). I've adjusted the recipe for AG. My hop schedule is different too, and I'm not sure why I did that (unless he's changed the recipe since I pulled it), but it works...

The Raging B*tch and El Diablo

I have brewed this and gotten pretty close. It is delicious. Here is the recipe I used (not sure where I got it). I will brew again soon. I've got two others lined up in front of this one. The yeast I used was WLP530 Abbey Ale. The recipe I used called for Ardennes (Wyeast 3522), but it was not...

    Raging Bitch

Overpriced, yes. Overrated, no. I never really liked the Rogue line to begin with. And Flying Dog's graphics are a bit off the wall, but nevertheless, this is a very good beer. Belgians and IPAs are really all I like to drink anymore. This allows me to have the best of both worlds.

    Raging Bitch

Umm...not that into Stone?? And why might I ask? Few beers can rival the quality. Although, the afformentioned Raging Bitch is quite good. I just tasted for the first time, and I'm looking for a clone recipe.

Or, you could say that the 17 lbs. is approx. 90% of your grain bill. So you take the anticipated OG (1.103) and figure that 90% of that needs to be replaced with extract: 103 * .9 = 92.7 92.7 * 5 gal = 463.5 points 463.5 / 44 (dry) = 10.53 lbs. DME 463.5 / 37 (liquid) = 12.52 lbs. LME

    I'm no expert at converting (don't use extract much at all), but replace your 17 lbs. of pale malt with about 10.5 lbs. of DME or 12.75 lbs LME. This is assuming a 75% efficiency: 17 lbs. * 37 PPG = 629 629 * .75 = 471.75 points 471.75 / 44 PPG (dry) = 10.72 lbs DME 471.75 / 37 PPG...

I can tell you what I'm going to try in order to achieve that. I'm going to try a different yeast. http://www.thebrewingnetwork.com/forum/viewtopic.php?f=2&t=19872&start=0

I was closer to 6% on the Carafa III. And I didn't go too heavy on dry hopping, which is why I'm lacking aroma. 15.00 lb Pale Malt (2 Row) US (2.0 SRM) Grain 88.24 % 1.00 lb Carafa III (525.0 SRM) Grain 5.88 % 1.00 lb Caramel/Crystal Malt - 60L (60.0 SRM) Grain 5.88 % 3.00 oz Chinook...

Sounds like you got a good batch going. I'm still drinking mine and although I didn't get the ABV I was looking for, it is rich and delicious. It is lacking the hoppiness of the real thing, but it's good nonetheless. I will increase aroma hops toward end of boil and dry hopping next time. My OG...

drywall mud mixer to aerate wort?

I think it's overkill. Pouring it vigorously into the fermenter and using a wire whisk is plenty sufficient.

Have you made this this way before? Looks like you really like the same things as I do. Belgians and Stones!

As for your recipe, if you look back through this thread you'll see that I used similar abounts of hops and I will definitely increase next time. Went to a party last night and I had people tasting this. They loved it, but I did a side by side with the Stone brew, and it was lacking a bit...

IBUs are generated by boiling the alpha acids in the hops. The longer you boil them the more bitterness you achieve. There is no boiling with dry hopping, therefore no bitterness added. Even FW hopping will not achieve bitterness. It's for arome only.

    Stone XI Anniversary Clone

Yeah, I figured as much. Plenty of IBUs, not enough hop "aura", if you will. The real SSR explodes in your nose and in your mouth with flavor, aroma, and bitterness. I'm lacking the flavor. You got a lot of different hops going on there. Cleaning out?

Ok, so tasted this last night. It's really good, but it lacks the hoppiness of the real thing. It's only been in the bottle for 4 days, but I couldn't wait. Plus, the bottle I opened was designated as a tester as it was only half full. I expect improvement over time, but I will definitely make...
