    Short answer: Pale ales and IPAs, wheat beers, won't last. Stouts, Barleywines, sours, Belgian ales, should hold up as long as you are good with avoiding any oxidation.

    2.5 months is still really early for a bochet. Also how dark did you cook it? Like the previous posts, you have to get that fermentation started again as well.

    I just use the online priming sugar calcs. It helps me control the carbonation by style instead of a certain amount every time.

    1 - peppercorn saison mead. It was fine before the peppercorns, and after, nope nope nope. Tried to age it and it only sucked harder every time. The only time I've ever dumped.

    Yeah I think it depends on how equipment heavy you are. I have the simplest BIAB setup for 5 gallons, ferment in buckets, and bottle (I do want to keg though). Before I get to into it, I'm in the black for sure I'd say.

    I hope Mangrove Jack's dry yeast becomes more readily available, it's one of my favorite dry yeasts if I can get my hands on it. Liquid is good for belgian styles that need really specific yeast qualities only (and sours).

    Agreed, I think OP should keep a very close eye on carbonation. OP says it's undercarbed at the moment. I'd check a bottle once or twice a week until it's carbed to at least something acceptable, then cold crash them all.
