    Certain beers may finish faster than others. For instance I just brewed a hefe about a month ago and it finished up fermenting in 10 days.     I tasted the wort when I got my OG reading and of course tasted sweet but no off flavor. I siphoned out of the kettle so i didn't dump everything .     So I finished up my first BIAB yesterday and it was a blonde ale with 2 row and and crystal malt . Process was completed at 9 last night . I used white labs California ale wlop051.     Yea kinda figured it hard to do something with the liquid extract. Maillard reaction makes senses when I searched it right now . I don't plan on doing extract anyways after this batch , BIAB is next . I also saw people adding extract at end of boil too for better clarity or color . Seems to work...
