    How long to brew a winner beer?

    time is different for the sort of beer your doing. I believe 'bigger' beers take longer til there ready, some stay in primary several months. where a hefe is designed to be consumed after only a matter of weeks.

    Benefits of a Wort chiller?

    chilling the wort fast results in a better cold break. proteins coagulate and sink to the bottom so you get clearer beer. Theres a debate going on about people who chill and those who dont about flavor, but chilling allows you to pitch your yeast sooner, so infection doesnt set in.

    update: phazyme doesnt help with blow off, at least not with a hefeweizen. in the first 24 hours ive blown off 1.5 litres. FWIW, i took one gelcap, dissolved in boiling water and added to cooled wort. ill just order some fermcap from northern brewer.

    the tanks? no, there aluminum chrome alloy and there clean, its all about where you get your gas filled, if you got to an airgas facility and tell him what u want it for, theyll make sure you get food quality gas

    yea fortunately it was done outside on the deck, oddly enough at that split second i was more concerned about getting liquid co2 in my regulator lol. i use 20 oz 'paintball' tanks from when i played alot, i use a kobalt co2 regulator.
