overshot my mash temps by alot, reason for lower OG?

Scratch that. Unconverted starches ARE soluble and would impact the OG reading. http://www.howtobrew.com/section3/chapter14-1.html I stand by my previous comments. :mug:

overshot my mash temps by alot, reason for lower OG?

Ah, now I see what you're saying. I didn't realize that the starches in the malt wouldn't dissolve in the mash water like sugars do, thereby impacting the OG. I thought they would dissolve, but wouldn't be fermented.

How do you do your brewing calculations?

Beersmith when formulating recipes and Brewzor Pro Beta (on my Droid Incredible) during brew sessions for on-the-fly calculations (infusion temps, hydrometer temp. adj., etc.)

overshot my mash temps by alot, reason for lower OG?

Um, I didn't miss your point. I was agreeing with it. :mug: If the enzymes are denatured, there won't be fermentables for the yeast. After fermentation, the FG will end up a lot higher than predicted. I had a stout that I inadvertently mashed >162 F. According to Beersmith, it was...

    Official PMBS build thread....

I love this build! You're making me rethink my idea for a poor man's brewing tree. A single rolling cart using buckets for wort collection is a lot more practical and a lot less expensive!

overshot my mash temps by alot, reason for lower OG?

The high mash temp wouldn't make your OG low. It will make you FG really high, since the enzymes weren't able to convert the starches in the malt to fermentable sugars. What's your setup like? What type of efficiency do you normally achieve?

3 week deadline--what would you brew?

Check out Orfy's Mild Mannered Ale. This would fit the bill perfectly. I've gone 10 days grain to glass with this.

    Dogfish Head World Wide Stout

One of those at a time is plenty for this cowboy. It's good, but it's really boozy.

    Updating and Antique Fridge?

I believe the 'Kill-a-Watt' merely measures the wattage the appliance is consuming. It doesn't reduce it in any way.

    Most accurate instant read thermometer?.

I just got this one, made by the same company that makes the Thermapen: http://www.amazon.com/dp/B002GE2XF8/?tag=skimlinks_replacement-20 Lots of positive reviews on Amazon, and I used it yesterday to brew. I give it two thumbs up so far. If it lasts a while, I'll be happy.

    So who's brewing this weekend?

Orfy's Mild Mannered Ale just started to boil. Mmmmmmmm....

Is Beersmith the best software for custom recipes?

I've been using Beersmith on Ubuntu Linux under Wine, and it's been working great. I love me some Beersmith!

    Testing long primary

This, along with the other threads aforementioned, are prompting me to sell my carboys on craigslist and use the proceeds to buy Ale Pails!

What do you prefer more in your LHBS?

I chose 'Being dedicated to homebrewing', as this seems to me to be an "all of the above" choice. If a store's owner is dedicated to the hobby, then most of those other things will fall into place. I live south of the ROC, (In fact, I'm the one who guessed 'Beers of the World' in your LHBS...

IPA FG 1.026, Stout FG 1.022, what to do?

Here's another vote for high mash and a potentially inaccurate thermometer. I just lived the same story with my last stout (still working out the kinks in getting Beersmith to properly adjust temp for my mash tun). Stout finished at 1.024. My mash was probably >160 deg F for the first 20...

    Caramel Porter

I emailed Saranac to ask about this, as this is one of my favorite beers. We'll see if I get a response.

    2011 Brewing Goals

Rumor has it that Santa's bringing me a 15 gallon brew kettle. With that in mind, my goals are: 1) Scale up to 10 gallon batches. 2) Experimenting so that I get to know my yeasts a little better by fermenting the aforementioned 10 gallon batches with two different strains (5 gallons apiece)...
