    I think I know what your saying now. Basically if im NOT making a melomel, then I should just reattach the airlock after that first rack and let it sit. Its bubbling away happily now so no stuck fermentation at this point.

    Thanks CB! Id like to make a high alcohol dessert Mead. Ive heard you may need to add more honey at a certain stage....would this be at the first racking or later perhaps im missing a step all together?

    Well I didnt even have to wait until tomorow! Im happy to say it is now beginning to bubble! I think I dodged a bullet and wont be using any more campden unless im making a Melomel....I made an assumption that the campden had either killed the yeast or may even still give me a slower...

    No Problem HB99! Yeah, the selection of commercial meads here in the quads suck as you prolly know. Ive looked into getting some selections from overseas so in the mean time...Ive got time for new hobby and what better than home brewing my own Mead?
