Tips for brewing a strong belgian ale

Rezing this thread. For those of you who did a Dark Strong Ale, how long did you age it? I have one in the primary right now and I am trying to decide if I should rack to secondary or just rack it to a keg and let it sit.

    Failed starter?

Yea, mine are the same way. Little to no signs of fermentations, maybe a small ring of bubbles around the glass at the top, but a nice cake on the bottom.

    Yeast Washing Illustrated

Yea you are fine. I did that with my first one and it was fine.

Spontaneous fermentation, no hops... Now what?

Was flying a kite in a thunderstorm worth the risk? I mean, I know we preach sanitation because it is critical to consistently produce good beer, but what is so wrong with experimenting sometimes? The whole idea of beer was believed to be an accident and someone was brave enough to take a...

Spontaneous fermentation, no hops... Now what?

He added the speciality grains after he saw signs of fermentation. I can't wait to hear what this tastes like, seems to puke all over conventional wisdom. I definitely endorse this :D

    Stuck Fermentation on a BDSA

This is the fermentation after 48 hours. It is going crazy. There is about a half inch layer of yeast in the bottom of the growler. Really glad I put a blowoff tube on this one or it would have been a crazy mess.

    Stuck Fermentation on a BDSA

Just to update, I pitched some Wyeast Abbey II yesterday and things look great today. Nice krausen formed and plenty of activity through the blow off tube. Hopefully the two half gallon starters will be able to finish the job. Also a few days after I posted this, I took another reading and the...

    Saving yeast from a starter

I don't have any White Labs vials sitting around so I think I might try pitching 90% of the yeast and then wash the remainder and keep it in a mason jar. Hopefully that will work.

    Saving yeast from a starter

I have a gallon starter going right now of Wyeast 1762 Abbey II. I would like to save some but now the yeast will be pretty well shot after fermentation. What is the best way to save a portion of a starter? I have a bunch of half pint jars that I use for washing. Should I pour a portion into a...

    Yeast Washing Illustrated

It's best to make a starter with the yeast from the small jar. Helps wake up the yeast and get them ready for fermenting

    Horrible Lager.. What went wrong?

But you have no idea what you are tasting or what it even means when you are starting off. I think what Revvy is trying to drive home is that early on when you are not really sure what is going on, you are going to cause way more harm than good tasting an unfinished process. Hence all the...

    just bottled first batch

My first beer was an Amber as well and it was very bitter in the beginning. It mellowed somewhat with age. At the time I did a full boil but with a recipe for a partial boil, so I got a lot more bitterness from my hops than the recipe anticipated. Oh well, you live and learn.

Heading to Indianapolis in a week, any suggestions?

I love that place. Always helpful, knowledgeable people available. I can even harass them on Twitter to see if they have stuff in stock and they always get back to me quickly.

Heading to Indianapolis in a week, any suggestions?

And still gets his grain from there as well. I had to wait for them to finish grabbing grain a while back. Bier has some excellent beer for sure. Sun King is also a good one. I am a big fan of Barley Island which has a restaurant in Broad Ripple and the brewery is in Noblesville which also has a...

    Stuck Fermentation on a BDSA

I stepped up the starter over a couple of days. I started with the Palmer recommended ratio of 1 pint of water to a 1/2 cup DME. Then I added additions equal to that over the next 5 days, swirling the growler I used every chance I had. There was definitely reproduction but maybe not enough for...

    Stuck Fermentation on a BDSA

The yeast seemed to do well in the starter, but it could be old. Looks like I need to pick up some more yeast so I can repitch

    Stuck Fermentation on a BDSA

Starting gravity was 1.068, with DME and Table Sugar, should have bumped up to 1.086 if I remember correctly, don't have BTP in front of me. Yeast was harvested from a bottle of Noir de Dottignes, made a 1/2 gal starter. Temps have held steady around 62-64. I guess I will keep checking it to...

    Stuck Fermentation on a BDSA

So I am doing a Belgian Dark Strong Ale. Fermentation started off well, had to put a blow off tube on, life was good. I missed my target when mashing, so I added some DME, started moving again, things were good. I made one last sugar addition, both for points and to dry it out. It's been 19...

Inexperienced Beer Drinkers and home brewing

Kroger's U-pick 6 pack is awesome. I got to taste a lot of different stuff picking from that wall. One thing I would recommend is keeping a journal when you are trying a lot of new stuff. It is easy to forget what you like and didn't like. I started taking pictures of all the beers I have...
