Minutes?! I really need to change my practices then. I frequently visit my brew room with the lights on where my glass carboys are fermenting all my brew. I'd say my brews have been subject to many hours of fluorescent light by the time they are consumed. Also... isomerized?

I've pretty much soaked my hands in a 1oz:1gal solution (5 times stronger than recommended) and saw no ill effects. I think it's harmless.

Interesting! I had no idea. So Amber extract is essentially just light extract combined with the crystal extract? This is good news. I think I'm going to order some bulk light extract and specialty grains... so versatile!!!

Got it! Used it to brew my amber last night, and the late extract addition works perfectly! I even had to tell it "add after the boil" - I forgot to add it til I had funneled the wort into the carboy :p Looks nice - are there any graphical features like charts and IBU/malt representations...
