    I brewed the Session Mild (E) this afternoon. My temp on the steeping grains was a bit of a roller coaster... got too high, about 170 F. When I tried to fix it, it dropped to about 140 F. I'm still new at using steeping grains so I'm not sure what to expect but I'm looking forward to trying it.

    That's about right, I think I started my boil off with about 3-3.5 gallons so I was left with about 2.5 gallons of wort before I topped off.

    Ah, yup. I didn't mix at all after adding water to get to 5 gallons... ops! I didn't think I'd be able to get that much extra sugars out of the grains, especially on my first time using steeping grains! ;) Thanks!

    You're probably going to get some flack about doing small batches... It would be a good idea to do some searches for small batches and/or 1 gallon batches. I'm about to start some myself. I'm going to do dry extract with some specialty grains and hops. I'm looking at different 5 gallon recipes...

    Looks like BEEEEEER! ;) I just started an apple wine yesterday as well. From the reading around the threads I've done. Most people enjoy the taste better the longer it ages. I'm not planning to bottle for about a month. RDWHAHB :)

    My guess is that recipe #2 with brown sugar is in the bottle on the right! If even the slightest bit of bubbling is going on then CO2 is being released and pushing out the O2. I wouldn't worry about oxidation on either of them. I'm a noob still, I'm sure others with more experience than I will...
