    tepache jack

I've heard the wild yeast from the rinds is funky, probably a fruity ale yeast either WLP051, s05 or WLP023, I extracted some yeast from DFH90mins that I never used but I'm probably not gonna use that for this, Wyeast 3068 is my first choice if lhbs has it.

    tepache jack

Not a cider bc there's no apples, however I felt this was the most appropriate forum. Thinking about making a strong tepache like an apfelwine... the USDA database the average of all varieties for 1 cup of raw chunks is; sucrose 9.88 grams, glucose 2.85 grams, fructose 3.50 grams. The...

First Shot at Cider...No fermenting action

Peservatives are designed to prevent bacteria from reproducing and inhibit their survival. I imagine it is possible for the yeast to live for a short while in sodium benzoate but it could not produce a hard cider. You should read the sticky...https://www.homebrewtalk.com/showthread.php?t=508303

    Most INSANE Idea Ever

Damn some one beat me to it... I guess it is possible!

    Most INSANE Idea Ever

I was going to post this in brew science, and I've decided against it. I suspect this might be quite danegerous... A man makes a large yeast starter of a high temperature yeast, like Wyeast 3724, and then begins to to drink it slowly over 24hours while also consuming large amounts of dextrose...

Need help fast! 30 gallen jacketed steam kettle! NG to LP???

Ive done a few LP to NG conversions on BBQs. it's not just the connection fittings that change... because of the variance in the density of the gas, restricters are added before the burners. In your case you'd be doing the reverse, trying to open it up.

    Predicting SG beforehand.

Next year I want to compute the OG of my ciders before I start them, ill check it with the refractometer before I pitch but I'd like to be able to plan it out and hit the numbers. I know the exact volume of liquid V, the weight of the cider M, and the weight sugar that is added S. Given that...

    ST Warlock Clone?

Is anyone else noticing that warlock isn't as good as the first batch? Last year I started talking about it, and this year I'm noticing the same thing.

    Pumpkin "Juice"

...also thinking since it's already hazy maybe if I added a small wheat wort to the primary or some pepsin might aid in the head retention. If it works for me I'll let you know I feel like Pumfelweisse isn't a thing for a reason.

    Pumpkin "Juice"

I think I'm going to try this... I might make a pumpfelwien version as well. =)

Do I need to sterilize my carboy?

When asked this I usually say if you don't wash your dishes you don't need to sanitize your brew gear. If you only rinse your dishes then you should at least rinse your brew gear. If you clean your dishes clean your gear with PBW when finished and sanitize with starsan before using it.

    applejack procedures

I always like to believe that the yeast is capable of re-achieving the total amount of alcohol percentage that results in its flocculation and the addition of any additional non-alcoholic fermentable liquid will reduce the solutions abv and reactivate the yeast. If it doesn't happen I typically...

    applejack procedures

http://homedistiller.org/forum/viewtopic.php?f=15&t=12714 This is around the point in that conversation where it seems the people who were saying water adds flavor had several thousand posts on that board. And the folks that agreed with me only had a few posts. Someone also linked this as...

    applejack procedures

So as we get back into that time of the year, I thought I'd bump this thread and also ask a question. Does anyone believe that adding water to cider for applejack produces a better product then using only fresh apple juice/cider? I always thought adding water was the cheap/hoochy way of...

How long can you age a beer and still bottle it?

How long can you age a beer and still bottle it?

8 months was the longest I've left a beer in secondary and now that I think about it I still haven't opened the bottles yet February is the aniversery so that's probably when I'm going to crack it. To test yeast viability: When I bottled it that last little bit that never siphons out I filled...

My Stirplate... Cheap and Easy Build...

That looks awesome if I screw mine up I'm going to try that. I bought 20/2 bell wire yesterday I don't think it's stranded but it's probably fine only cost 30 cents at home depot. Edit: my buddy, a linesman for the power company for the last 20yrs, said he would have used #16. I'm still using...

    ST Warlock Clone?

Thanks for the updates please do keep us posted!! Sometimes I think they use other adjuncts not mentioned to hit those flavors. Next fall I'm gonna hit Niagara Falls when the leaves are changing and I'm gonna make sure to stop by Southern Tier and ask them.
