Interesting, I was curious about what kind of flavors an IPA would get from the DanStar. I've had great luck with this yeast and saisons and even at some points use a space heater when I feel its not warm enough for the yeast to properly flocculate.

I am using a kit my local brew shop in Long Beach, Stein Fillers, put together/sells. Has pretty much all I need for now. I'll be upgrading to a larger brew kettle, getting an additional fermenter next and most likely making a wort chiller.

What temps were you fermenting at that were too high?
I was thinking the same and am initially brewing IPAs so a fridge would be unable to raise temps high enough. I'm going to pick up some stick on thermostats for the fermenter and possible an air temp thermostat for the area I am storing in.
