    Strawberry wine???

I did a strawberry concentrate not too long ago. I used 10 cans (2 per gallon) and about 1.5ish lbs of sugar dissolved in a couple gallons of water. I made sure to water up to 5 gallons though. Added montrachet and let it go. I mean really let it go, slipped my mind for about 4 months. When I...

    GOOD on Netflix STREAMING?

I've been behind the times myself... Recently watched 3 seasons of Breaking Bad - Awesome. Hooked from the first episode. Still watching here and there but feel a little burned out after 3 straight seasons, so maybe an episode or 2 a week now to keep my interest. Also, haven't seen it...

Making Traditional rice Wine. Cheap, Fun, and Different

Does this have to be made with a specific kind of rice? Swmbo has more (generic, store bought) rice in our kitchen than we can eat. I'm wondering if this with some wine yeast would produce anything like 13%+ and worthwhile... Not trying to go the cheap route, but more curious since I have soooo...

    Homemade Rum

Is there a reason no one has made 'sugar wash' and aged it on chips of some sort. By aged, I mean years. I know the wash itself is pretty disgusting but after all, maybe a little molasses/oak flavor would age well in it and provide a drinkable "rum" of sorts...

    Racking, clearing, and backsweetening

I currently have a 5 gallon batch of strawberry concentrate wine that wasn't noted how it was made :(... I remember it used 5 cans of concentrate, at least 2lbs of sugar (maybe like 2.5ish as I ran out of it), and water to near the top of the neck of a 5 gallon better bottle. Pitched...

    onion/jalapeno wine (cooking)

Almost been a month since I've updated this thread. On 8/29 I bottled (not filtering) and took a sip. Heat was still too much up front to drink. It's been sitting in a bottle since then. I opened it on Saturday night and marinated some chicken overnight with some of the wine and salt and...

Spiced winter beer with warmth, suggestions?

Thanks for the suggestions. I think I'll go with the EKG and see how it turns out. For spices, nutmeg and anise sound like good additions. Hoping that 4 different spices go well together and mellow and none are too pronounced.

Spiced winter beer with warmth, suggestions?

Changed the Amarillo hops to Cascade as they seem more like the average/normal hops to use. Also changed the IBU's to 26.4. Still looking to see if the chocolate grains are steeped? Also, still looking for feedback or if anyone has good tweaks for this? Looking to get ingredients this week I hope.

Spiced winter beer with warmth, suggestions?

I decided to try to come up with a brew that I hope really goes over well in December/holidays. I figure the normal is probably a little hint of cinnamon for that warmth spice (and others like clove/nutmeg/ginger/etc). I'm trying something a little different for the 'warmth', but I will retain...

First time looking at ingredients, help with srm's/color

I ended up downloading the brewr android app, and it's quite a bit of fun to play around on. I was playing around with creating a baltic porter extract, but I cannot seem to find any ingredient to up the srm? *Please note I was just testing how to create a recipe*. Forgive me if this is...

    hiccups?

^ lol... can't see how to quote on my phone :(.. I'm gonna have to try some of these next time even though some sound silly.

    Jalapeño wine??

I have a thread somewhere where I made a jalapeno and sweet onion wine for cooking. About 2 months after pitching when bottling I sampled it. The heat was too much up front and I didn't even care for a sip of it. It's been bottled for a month or so, but I'm not planning on opening it anytime...

    forms of extract

All this info is awesome. It looks like the ease of storing dme over lme alone is worth it to me. Now, I'm wondering where's a good place to get it from (not bulk), as it seems like approx. $6/lb at my lhbs is high...

    hiccups?

Ok, so I def. did a search on hiccups, and can't find anything related to the matter... I don't like drinking a lot of what people call 'swill' these days. I've done my fair share of it and drink whatever is cheap and on special at the beer granted I don't pay for the night. What gets me is...

    forms of extract

When I was at the lhbs the other night I happened to glance at the malt extracts they have (not kits). They sold cans of 3.3 lbs for about $18ish which I'm guessing is pretty average. But then they also had 3 lb bags of malt, which looked like a powder form of extract for pretty much the same...

    Better Bottle vs water cooler

I was at one of my local walmarts last night, and took a look at which water jugs they have. They have listed "Primplastic INC" on them and are <3> (or at least that's what it looks like). Can't say I ever saw 3's before, so I didn't get any. I haven't checked any home depots or lowes though, as...

    onion/jalapeno wine (cooking)

Didn't know a coffee filter would oxidize it, I just wanted to find a way to not get the couple seeds floating around in bottles. It seems like they just won't settle... I haven't done anything with it yet, just gotta find time. I did pull a little sample though to test on some chicken, and I...

prepping varieties for next year - planning wedding

So far if everything falls into place, the wedding date will be next August 24th. I'm in search of some ideas/thoughts/suggestions that would make some good variations/selections for next August. I am aware of the 1 year time constraint. I have 2 batches of apfelwein currently fermenting...

    onion/jalapeno wine (cooking)

I haven't checked on this at all since the last time I posted. I checked it last night though and it's starting to clear some. Still "blurry" when looking through it, but it is clearing up since the last time. I did notice some things floating in it, stuff that hasn't fallen to the bottom. I...

110v Recirculating eBIAB 2.5 gallon batches

Awesome project! Caught my eye since it's on a 110v system, and got my brain thinking (which according to swmbo means uh-oh, project, money, and time lol). I have a corner of a spare room in our place to take over, and using 1 pot instead of 3 would just be perfect for me. However, I did 1...
