    Forgot sugar! Need advice

    Hi! In the next two or three days I'm going to open a first bottle to evaluete it, I know it's too early, but I can't stand without doing it. Actually it cleared very well and I can read a newspaper trough it. Also in every bottle's bottom I can see a little sediment.

    First batch

    Today I started a 3 liters experimental batch of mead. I used local honey and as yeast I pitched a C. cerevisiae strain, called "narbonne", that was suggested me by a professional winemaker. OG is 1055, so I hope to reach a good abv. I'll keep you update.

    Fermenting in stainless steel?

    Industrial wine making relies on stainless steel fermenters, so do not worry unless you know that the vessel was used in the past to store strong acid or so on ( this could have produced some toxic corrosion product).

    Flavour are not always a quantity matter, so maybe this concentration is enough to the yeast to produce some bad tasting byproduct, but I don't really now, you should perform some trial, if you wanna know try to change only one parametr at time, or follow inspiration...

    This is a very good shape for a fermenter, also professional fermenter are conical shaped in the bottom. It make possible a better separation of the yeast cake from the green beer.
