    Refuge is going away from the Belgian thing... they have alot of pale ales, IPA's, NEIPA, a few stouts, saisons, sours, etc... blood orange wit is great. Pretty good choices. Dan Kelly their head brewer has really opened up the available choices and is taking the brewery in a great direction.

    I have seen others do "chambers" with freezers similar to yours and I think there was alot of trouble keeping the larger volume of stuff at the desired temperature for kegging / cold crashing.

    For what it's worth I converted the Edelmetal Bru Burner from NB to natural gas and it does fine. I have to double check on what part's I used, but I am 90% sure I only used a NG needle valve with a simple custom touch on the orifice. If interested I can list what I used / post some photos.

    Sour with dried cranberries

    I have a sour saison sitting on raspberry puree right now. I would imagine that dried cranberries are fine (craisens?)but I would run them through a food processor or blender first to get maximum flavor out of them.

    Ok... my gravity from the last post was just a estimate from floating the hydrometer in the fermentor. Today I dropped sample down to calibrated temp of 60° and got 1.012 FG. That's 81% attenuation which is exactly what the max attenuation I have seen from my other batches with the same yeast...

    I realize that, but since he only listed the varietal of hops I just did the recipe off of "default" alpha acid and the idea the cryo are 2:1 ratio. OP, if you want I can put in the actual number if you so desire to list them.

    Do you know a IPA that you really like? Reason I ask is you need to know your target for bittering. If there is a IPA that you know you like, maybe you can make your IBU target similar. I am also like you that prefer hop aroma vs bitterness. Cryo hops are about twice as potent, so I plugged it...
