    The highest I have ever gone is 12% but there are some strains that will go up to 18% abv. Lalvin EC1118 comes to mind.

    Boiling the Apple Cider

    I wouldn't boil it. But it is personal preference if you want to heat it to pasturize. I generally buy pasturized cider from the store so I do not heat it on the stove.

    From what it sounds like to me, it seems that your apple juice may have contained preservatives. Personally, I prefer to use apple cider instead of apple juice just because it is easier to find preservative-free cider in the local grocery store. It is always a good idea to save the labels...

    Hello From Central NY

    Hello, I was first introduced to home wine making and brewing from my college Botany professor. Since then I have taken up making both dry and semi-sweet hard ciders as well as mead. I haven't really had the time or equipment to take up making beers yet.
