    48 hrs, no activity in the airlock

    This is the first time I've had this happen to me. Thursday morning I brewed up a Dunkel. Used Windsor Danstar yeast, re-hydrated. 48 hrs in and I've yet to see any activity in the airlock. And, since I use a bucket, I got no way of seeing if I've got trub forming on the bottom. Oh well...

    Somehow I get the feeling there'll be another story to tell on Saturday. I find it hard to believe that neighbor's gonna just drop it. I'd be extra careful to follow all rules and laws this weekend, cause you just know he's gonna be keeping an eye on you.

    Nope, not me. I hate those guys too. I've been out here for 21 years. I quit needing to be in a hurry about 20 years ago. Lot of newer, younger drivers out there giving guys like me a bad rep.

    I try to go four weeks in the bottle at least. Takes at least a week to carbonate, then I just let it sit for a while after that.
