    Ended up fermenting with nottingham, dry hopping with saaz, cascade, and zest from two oranges and a grapefruit. 2 weeks in bottle now, turned out great. refreshing with a subtle fruitiness.

    Have you tried the basic recommendations in the "Water Primer" sticky in the Brew Science forum? Gives very simple instructions for building up from RO water to get in the ballpark of a couple broad beer categories.

    Interesting stuff. Living just steps away from a store that sells RO water for 69 cents/gallon I think I'm just going to start building my water from that with minor additions as suggested in the primer thread. Seems simpler that way and the additional cost is negligible.

    I haven't yet, no. I also haven't tasted the type of off-flavors I've read about being associated with those. They are both shown above at a level of 2.0 - is this an amount that needs addressing or that could cause the astringency I've noticed in my beers? Thanks.

    That's what I'm thinking too- already have a hefe in another fermentor now so might as well switch it up. I think what gave me pause is it may be TOO clean of a ferment with Notty, lack of any flavors that you might get from 1010 or 320 leaving it a bit boring.
