Is it okay to add more water during fermentation?

If you hit your OG leave it. If you feel you absolutely need to lower the gravity or that you really need the extra three bottles you will get out of it boil the water first (to get rid of nasties and O2). But if your OG was good don't mess with it.

    Lessons learned from first brew

Rinsing or drying agents (e.g. Jet-dry) can kill head retention.

    Old ass grains

I tossed several bags that were not sealed well without bothering with the taste test. Then after the taste test, I tossed about 1/3 of it. However most of it smelled and tasted fine...even 15lbs of Marris Otter and another 20 lbs of Dingmans 2 row base malt.

    Rebrewing

Thanks. Yes they were long distance. I brewed in VA, moved to NC with three loaded carboys, a half dozen full corny kegs, and all my equipment (and I've got a ton of it including a 4 tap keg-o-rator). I moved from NC to NY with one carboy and all my equipment. I recently moved from NY to TN...

    Old ass grains

I know this question has been asked, but mine has a twist. I've returned to brewing after three years. When I was moving three years ago, I packed all my supplies (including several plastic bags of special grains as well as regular malt) in a box. The box was well sealed, but has moved from...

    Rebrewing

I'm back to brewing after a three year hiatus. We've been moving every 10-12 months due to my wife's work and have finally settled in a place where I know we will be here three years. We still haven't unpacked, but I'm brewing this weekend. I was doing all grain batch sparging when I left...
