    Just Saw this thread. There's some great shops down here now. "The Krawl" just off Duval on Southard St. "The Porch" on Duval and Caroline. Key West Home Brew just off Duval on Appelrouth Lane.

    Restaurant grade sanitizer

    We just brewed a batch of Mr. Beer that we got on a super sale price. The malt and sugar came with a package labeld "No Rinse Sanitizer". We were too scared to use it. Anybode know what that is? Also, I have always sanatized with bleach. Everyone always tells me that's bad. What's Quat?

    What makes an IPA an IPA?

    Just entered our latest IPA recipe into the Key West Brew Fest (this Labor Day). It is the Wood's Wall, NE 15-20, Voyage Strength IPA. Until we got central AC the only thing we could brew in KW was IPA because of the high daily temp fluctuations.

    Fermenting in Carboy?

    It is, of course, personal preference. There are 6.5 gal carboys. You can also just blowoff a 5 gal. It works wonderfully. The bucket with a plastic "burping" bag works just fine as well. The key is two-fold, making beer and not worrying. -Home Brewing in Key West

    You need some food grade tubing and a drilled bung. Both are easily abtained at a local home brew shop or online.

    Replace Old Bottling Bucket?

    Replace the bucket. The bacteria can really degrade the taste of your beer. You may also consider racking into another carboy and bottleing out of it using a siphon and a bottle filler. This makes for very little mess.

    I use four or five feet and run it into a bucket of water. I find the more grains or yeast or hops that gets through the strainer the more blowoff I get
