    I'm by far a veteran but I can tell you that when I add 1 tsp of Irish Moss in 5 gallons, I can watch my beer clear in the sight tube. The wort goes form hazy to clear with coagulated break in the last 15 minutes.

    I did the AG version of this 2 weeks ago. Got an OG of 1.088 and after checking it yesterday it had a SG of 1.006, 10.75% ABV. This stuff starts off sweet then finishes like rocket fuel. I hope this mellows a bit over the next 2 weeks before bottling.

    My beer is down to 1.040 after 96+ hours, after an OG of 1.056. It is taking its sweet ass time fermenting but it is going down still.

    Those brew balls look like a bad idea, wouldn't yeast and/or anything else settling on them throw off the SG they were designed to float at? Maybe they were not designed for anything other than very general estimates.
