An Interview With Saint Benjamin Brewing

Tim: "Also, being able to get really fresh yeast was a huge change." Tim: "I also think if I had a source of fresh yeast during my home brew days, my beer would have been even better." Am I using old, stale yeast, and I don't even know it? I make a starter, cold crash for one day, and...

Last 5 batches have been No Sparge... NEVER going back!

How does the brew bag increase efficiency? Did you change your crush? Does the brew bag allow you to use less water? Or, maybe using less water is unrelated to the brew bag? If so, now that you use less water, did you reduce boil time? Or, are you saying you used to stop runoff before the...

    Confession Time

Nothing to confess about that. I still have wee heavies that I made long ago. I claim to be aging them, but really I just don't like malt-forward beers. Drink what you want --but eat your broccoli.

Newbie brewer with a question about secondary fermentation

Secondaries are no longer recommended in most instances, though many old instructions call for it. You may want to do a little research and decide for yourself.

    Why So Quiet

Well, that clears that up. "Doestrogen" seemed either incredibly odd or over-my-head clever. Thanks for making a sound (sound) (sound). *crickets*

Hello from a beer brewer and cheesemaker

Welcome! Do you ever just sit on the couch in your underwear and eat a whole block of cheese?

    Morebeer Fermonster Ported--reach to bottom?

If you don't mind, what is the diameter of the opening?

First use of kettle, rainbow discoloration, damaged?

Keep opening until you get blue flame. Yellow flame indicates too little oxygen and can cause soot on the bottom of the kettle. Since I brew at 7000 ft elev, the proper position for me is WFO.

    First wife approved beer.

Maybe. Perhaps it is more important to please the current wife.

    So Tomorrow, I Cold Hop

This was a double cold hop, so it required post hopping following removal of pre-existing cold hops. I just don't get the aroma I want from pre-hop hot hops near the end, post boil.

    So Tomorrow, I Cold Hop

Well, what was it? What beer? What hops? When you say "cold" hopped, I assume you dumped them in from the freezer?

How big of an Erlenmeyer flask do I need?

I have both a 2 L and a 5 L. I haven't used the 2 L in years. Go big, IMO. However... the 2 L fit in the fridge for cold crashing. I bought a 5 gal drink cooler for the 5 L. Well worth it to me. I also make large starters and reserve a quart for the next batch. And I make 7+ gal batches, so...

    Northern Brewer

I like both NB and MoreBeer. (In case someone is trying to keep score.) Beer companies are the best!

    So Tomorrow, I Cold Hop

Sometimes I'm distracted by unimportant stuff, and I have been neglecting the cold hop revolution. Sorry about that. As an alternative, how about "slow hop?" "Slow" is sometimes advertised as a positive attribute for products. Slow churned ice cream. Slow roasted pig parts. Slow-brained HBT...

water getting sucked up into air lock

I'm guessing you are using a 3-piece airlock. Water is not supposed to float the inside piece. Gas floats this piece, but only if your fermentation is producing gas. Otherwise, it sinks. A small change in temperature can suck that piece down and then continue to suck some liquid. As noted...

    Starsan Caps $uck!

Yeah, I broke mine too. I am, however, incredibly strong. :) Here's my interesting side note. The caps from those old White Labs vials and the caps from 2 liter soda bottles both work the same, because those vials are actually preforms for the soda bottles. First they injection mold the...
