Water volume mash & sparge question

Why not add water to your HLT once the lautering process has begun? Heat water on your stove check temp and add to HLT mid process.

kill lager yeast before pitching ale yeast?

I agree with the others. I think just raising the temp a little will get them working and let them get off to a decent start as you drop temp slowly.

How bad of a whoops was this?

You aren't going to ruin anything and who knows you may like it better that way.

This won't seal air tight. Will it work?

There is just a good feeling when you watch that airlock bubble away when you first start brewing, sort of a reassurance that your hard work is paying off. I have done 2 open fermentations, which were pretty interesting and delicious, so there isn't a whole lot to worry about.

    First batch soon

You don't have to make a yeast starter with WL ale yeasts but it does help pitch plenty of good yeast. You'll learn that yeast and time will be your best friend as long as you are nice and sanitary. StarSan is the best way to go in my opinion. You don't have to rinse out the foam or worry...

    Hmmm, this is different.

You may have a little renewed activity if your temp might have fluctuated down then back up. Be sure you don't have too much temp variance from day to night to day, etc. The good news is that your yeast is doing it's job! Let it be and they will drop out when done. :ban:

This won't seal air tight. Will it work?

I would just order some ingredients online and include a bucket and a lid in my order along with any other items you may need. My goto sites are Morebeer.com and northernbrewer.com. I have been leaning more toward Northern Brewer bc their flat rate shipping gets to me in FL pretty quick and I...

    Wort cooling

I agree, I have a 25ft and a 50ft copper wort chiller and the 25 just does the trick on a full boil but the 50ft takes care of it no problem. I live in FL and it is tough to get the water from the hose to cool my wort down below 70 so I will start out with just the tap water running through the...

    First batch soon

Make a yeast starter and it will help clear up any mistakes, oopses, you make on brew day. Never underestimate the power of a great pitch. While you are waiting for your kit and ingredients read How To Brew by John Palmer. The first edition is online for free as well at howtobrew.com. As...

Yeast Washing - Lots of Trub, no color separation...

You could also add a little new wort as if creating a yeast starter and once the yeast goes into suspension and multiplies then you can decant the yeast in suspension into a new jar and let it finish multiplying and place in the fridge to harvest your nice new layer of yeasties. I had to do...
