    grze, the easiest commercial fermentation chamber is a mini-fridge (make sure it'll fit your fermenter and an airlock/blowoff) plus a ranco or other temperature controller. Done and done.

    How long is uncrushed grain good for? I am inclined to add a couple more bags of base malt, but I don't want to end up with stale/bad grains. Adding another couple of sacks would probably put me at approximately 18 months of base malt supply. Should I risk it? Thanks for any opinions.
