    Sorry for the hijack, but can you explain how you change boil time while maintaining OG to affect the fullness? I'm trying to learn how to make a stout the way I like it.

    Not an expert, but this got me thinking. Where is your temp control probe located? If it's insulated against the keg, the air temp in the keezer may be getting warm before the compressor kicks in. This might allow the beer lines to warm just enough to allow the CO2 breakout that daytripper...

    You made your adjustment pre-boil? Then, yes. IBUs will be the same.

    If your batch size is now greater than 21L to achieve the predicted OG, technically your IBUs and mineral concentrations (Ca, Cl, SO4, etc) will be lower. How much effect this will have on taste depends on how much extra water you added.

    Hmm. My guess is poor control of mash acidity. You need a mash pH of 5.2 to 5.4 to ensure proper conversion, taste, and storage. Outside of that range, problems can occur.     An over carbed beer won't be foamy inside the keg. The foam appears in your glass as the CO2 rushes out of solution as the beer is depressurized. I just fought this same problem.     I honestly don't know, other than a few reviews on Amazon say that it can only push the beer not carbonate it, and that setting it to not foam like crazy was quite hard. I don't have any experience with the product.

    On a more constructive note... It sells for$110 on Amazon, and got pretty shotty reviews. Maybe explain to her that this contraption is for bringing carbonated beer home from a brewery and serving, which doesn't help you that much. Only you know your wife, and how she'll react.
