    I've done both and have made very good beer. It is always better to pitch the recommended amount of yeast, but I wouldn't worry about it too much. It won't turn out "bad". It just may have some additional flavors that you may not have expected.

    It will work. You may have some off flavors because the yeast will be more stressed during fermentation, but it will make beer.

    But it also shouldn't be any worse than the shaking, pumping air methods. As long as you can sanitize the mixer and it is strong enough to pull a vortex in a big pot, I don't see a downside.

    I have ordered yeast from midwest many times without a cold pack and it has never failed to start. Make a starter to be sure and call them if there is a problem.

    It would probably be cheaper just to buy another pack or dry yeast. They are pretty cheap.

    In my village, the water and the sewer bill are together. If we need to fill a pool or water new sod, we can call the village and they will adjust the bill for the water only so you don't have to pay the sewer since the water isn't going down the drain. Maybe that can save you a few hundred bucks,

    Alcohol has a specific gravity of about 0.78. So, by covering the sugars to alcohol the density of the solution lowers. In extreme cases where a simple sugar is fully converted, the amount of alcohol cause it to go below 1.
