There are tons of information regarding fruit beer fermentation. Ok...So is 1.011 after the mangos addition? If so, you are there. If not...What is the gravity right now? Through my results, adding fruit, isn't as predictable as fermenting your wort, and that's just the nature of the beast...

I always steeped my full boil extract in the full boil amount....But it's probably just a convenience issue with heating and holding 2.5 gallons of water vs 6 gallons of water.

What was your mash temp? Full recipe...Some more details might help clarify some things...You might be done...Although I hope not....

Hrm...I've never had a rum flavored beer, but I'm thinking for some reason a Holiday Spiced Beer or a Pumpkin Beer. Maybe add a little rum to a couple of different beers as "research" and see how you react. :mug:

Hi, Absolutely you can use fresh ginger. Just remember to adjust for that because it takes more fresh ginger than powder. And be careful with the cinnamon, it can get over powering pretty easily. The best way to increase the alcohol is up the extract. But you'll have to adjust your hops...
