    the brown sugar isn't going to give you much flavor at the end, just slightly higher alcohol content. what flavor are you looking for?

    Yeah, I'd say that is slightly cold. I ferment at 70 degrees. All and all, you want a consistent temperature.

    Adding Coffee to a Porter?

    I did this for a Mr. Beer kit in the past. I would suggest adding 1 oz. (strong coffee, see below) to each bottle. To make strong coffee, put in like 12 scoops of coffee to 12 "cups" of water. It turned out really well!

    Force carbonation is the sure fire way. The other way is to pour out the first couple beers. And then, depending on how soon you drink your next one, you might have to pour another 1 out each time you drink (if its days between beers).

    I would go with a stainless one. Everywhere I've read talks about using stainless steel.

    My guess is that is not what you want to do. Pale is a flavor of malt. Using less of a darker malt probably will not give you what you are looking for. Maybe order it online? have you tried midwest brewing supplies?
