    These guys actually had a brief moment of national fame a few weeks ago. They did a show on Christmas Eve which the local (Christian) city council tried to cancel, the main argument being that it 'just wasn't right'. It probably sold out :)

    Hehe cool post. Did you try 'Diebels Alt'? Mass produced, owned by Anheuser-Busch InBev. It's my go-to stuff whenever I am in Germany and want do drink cheap stuff. I made an Alt a few months ago which turned out a bit too malty.

    I've got a cheap Chinese 3-wire pt100 on my Auber, works fine. Looks exactly the same as the Auber probe.

    Salve my fellow European :) I also suffer from very hard water which is not really suited for brewing. In my experience, instead if spending a lot of money on test kits, lab analysis etc. it could be more economical to buy a small Reverse Osmosis filtering system and build your water profile...

    Waterless Airlock?

    I use Sterilock for cold crashing mostly as it doesn't suffer from suck-back and promises to keep nasties out. How well the odor filter works I don't know, never used it. One of the major drawbacks is that it doesn't give any indication of fermentation being active like a bubbling airlock would do.

    I do 2.5gal BIAB using 'The BrewBag' which is excellent as stated by others. I built a haybox out of cheap styrofoam panels. Works reasonably well!

    plus one on the sodium hydrox. People here tend to repurpose old central heating heat exchangers that are beyond dirty and get them usable for brewing using that. A big fat plus one on the protective gear, it's really nasty stuff.

    I have a small portable 3 stage system (kind a like the HbrewO RObrew thing but tinkered together myself for far less money) which can produce about 2gal/hr. When I just got it after using it I left it alone for a few weeks and when I wanted to use it again the waste water smelled really bad...

    What to get next?

    Invest in yeast health stuff (stir plate etc) and water chemistry (RO system and salts, pH meter etc). My beer improved tremendously when I started doing those things.

    I don't have one myself but I hear the threading has poor finishing and is full of mold seams. Once those are cut away it should seal.

    Used the Cooper ones a few brews ago, dropped 2 in each bottle (45cl Grolsch swing tops), turned out great, very carbed (which was my goal) but no gushers.
