Brewfirm makes a good Belgian extract. They are actually in Belgium I believe. Brewed a Grand Cru and opened one after 5 weeks ( they recommend 6-8 ) in the bottle. Off the hook.
Brewed some wheat beer yesterday. Briess LME, perle and spalter hops, a dash of lemon juice and corriander. Made about 3 gallons and am fermenting in a 5-6 gallon Coopers carboy.
The bubbles from the airlock have been going ape****, in fact, I one side of the water ( using a 2 bubble airlock)...
Saw an Erdinger clone recipe for 3 gallon batch. It called for 0.2 oz Perle pellets ( 60 min). 0.3 oz Spalt Spalter pellets (15 min) and 0.3 Spalt Spalter ( 1 min). Added to Briess unhopped bavarian wheat LME.
I have an oz of each. Would I mess up the brew if I added all the hops at above...

LHBS guy said its good for about 2-3 gallons, so I'm thinking about 2.5. I assume I should boil about 3 gallons, to make up for evaporation?

I have two cans of Coopers extract. One Lager and a Canadian Blond. The kit included 1 kg of brewing sugar and 1kg of brew enhancer. Anyone know how and when to add these. It says to add sugar to wort mixture, but nothing about enhancer? Plus it only included one bag of each, yet two cans...
Some one just gave me a Coopers Homebrew kit . Along with it came two cans of extract...best used by 2007 and 2008. Are they useless, and just toss them out, or give them a shot?

You could secondary if you're going to batch prime and/or add anything to the wheat...orange, coriander, etc. But other than that, as someone else said, its mainly for clearing up a brew, and theres no need for wheats, stouts, etc.
