Very good info.. On two of my three AF brews I have see high mash-in temps too. On the last brew before adding the grain I mixed the water well and shut the power to 0% for 10 minutes after adding the grain without recirculating (saw others do this) then go to 50% as mentioned above with recirc.

@BrewMan13 Thanks for the link! When you store the meter how much KCL solution do you use? My new unit doesn't have any standing liquid - look like just droplets all over the storage cover. Mike

@Silver_Is_Money & others I finally pulled the trigger on the PH60. I see Apera says store in 3M KCL solution. I've seen it mentioned that 3M KCL is just potassium chloride solution. Do you purchase the 3M or do you make your own. If the latter can you please tell me how? Thanks

As mentioned above I bought a stainless Grainfather replacement false bottom. It needed about 3/4" spacer. I had some high temp food grade HDPE so used it to make spacers. I tapped threads for stainless bolts:

I have seen more than a couple regret getting 6.5 instead of 10.5. Many small batchers use the 10.5 with the optional small batch ring.
