    Oh yeah. Clonefarmer - why do you suggest to pitch the high gravity yeast first?

    That looks like a lot of specialty grains for such a high gravity beer. Maybe cut back on those? Also, I would use the US05 first which is similar to what Sean did for CYBI. Then later when the US05 tops out, the high gravity yeast can work on the simple sugar- did I remember that right?

    I agree with dstar - adjust when you take the pre gravity reading. That is one of the main advantages in using a refractometer to check the pre & mid boil gravities.

    Do you want an English or American character? The s04 will probably not attenuate as much as the s05.

    I agree, no bucket for long term conditioning. Are you saying you have no other carboys to use?

    Belgians and adjuncts

    Check out the Bruery's Tripel that uses rice. I just use plain table sugar (except for something like a dark strong that may utilize dark candi syrup) in my Belgians. I would say that plain sugar is probably cheaper than the rice.

    Belgium trip- how much beer can I bring back to the US?

    Actually, I was there almost a year ago now. :) I was able to bring back all that I cared to - about 12 bottles. I brought a extra bag with bubble wrap to carry the bottles home. I didn't have to pay anything and just said I had some beer.

    Thanks everyone! Gila, poor spelling isn't my only problem. :) I figured it wasn't a big deal. So now I just need to figure out how I'm going to pack it for the return flight.

    I have heard the same about high alcohol but have never seen evidence of it. It's definitely more alcohol concentrated into 5 gallons but nothing extreme that would affect head retention. Maybe it's a symptom of some other issue? Are the glasses clean and free of all oils & soaps? Does...
