American Pale Ale Three Floyds Zombie Dust Clone

So after 5 days at 66 I bumped it to 70, and now after a week since pitching it's at 1.017. The fermentation was very vigorous, switched to blow off tube at day 3, it was pushing krausen throu the tube until day 6. Going on a 10 day holiday on Thursday, so on Wednesday I'll dry-hop and start...

American Pale Ale Three Floyds Zombie Dust Clone

Yeah, fast ferment is basically a grossly overpitched half-pint of wort that is fermented at higher temps. I've never used one before, but since I was unsure about this yeast both in terms of AA but also if it was actually alive, I wanted an early warning in case I needed to pitch some S-04...

American Pale Ale Three Floyds Zombie Dust Clone

About 30 hours in and my fast ferment sample is down to 1.015-1.016. This is my first go with a fast ferment, so not sure how long it would usually take to reach FG. It settled out a bit, while still having a thin layer of krausen on top, so I raused it a bit. If this is as low as the fast...

American Pale Ale Three Floyds Zombie Dust Clone

I finally got to brew this recipe today. Using Weyermann equivalents of malts, added a 20 minute hopstand. As previously mentioned I wanted to test the Northwest Ale (1332) for the first time, and I had gotten a 14 month old package. But I stepped it up thrice, gave it lots of love, and it was...

Feedback on a Rye and Wheat Saison

Cheers for all the suggestions guys, much appreciated. My thinking for mashing so high was based on 3711, which always ferments out for me no matter what I do to it. This will be my first brew with 3724, so yeah, will mash lower. For the sugar, the reason is three-fold: Dry it out Help...

Feedback on a Rye and Wheat Saison

    So for a 20L batch I have: 2.5 kg Pils (51.5%) 1.0 kg Rye Malt (20.6%) 1.0 kg Wheat Malt (20.6%) 200 gr Oats (4.1%) 150 gr Dark Candi (3.1%) 10 gr Perle @60 (10 IBU) 20 gr Liberty @20 (7 IBU) 20 gr Saaz @20 (6 IBU) Mash at 152, 90 minute boil. 1.050 OG 23 IBU 23 EBC I'm...

Feedback on a Rye and Wheat Saison

I'm looking into brewing a Saison that should be quite spicy, dry, but also smooth. I want to try a combination of rye and wheat, as I love me a rye saison and I love me a wheat beer. Of course, that doesn't mean combining the two is a good idea, hence the post! Has anyone brewed something...

American Pale Ale Citra Pale Ale- Oddsides Clone

Would this beer be able to support a slighly higher FG? I've been meaning to test the WYEAST 1332 Northwest Ale with a citra-based beer. It's specified up to 71% AA, which would land at 1.017. I don't know what US-05 has, but 1.058 to 1.012 would be close to 80%?

American Pale Ale Three Floyds Zombie Dust Clone

Gonna see about brewing this in a couple of weeks. Got some Wyeast 1332 Northwest Ale I'm dying to test, heard it plays real nice with Citra. Will probably throw in a hefty whirlpool as well.

    Craft The Perfect Draft Mini-Kegs

Most reviews of the conversion kit mentions that the regulator is *extremely* leaky. You've had no such issues?

    1-Gallon Brewers UNITE!

I recently bought a couple of 5L carboys, and have brewed with BIAB to fill them. It's all been going great, and I love the 2½-3h brew days, but there's one thing that bugs me, and that's all the sediment I end up with in the bottom of the carboy. I mill pretty fine since doing BIAB, and on...

How do you insulate your kettle?

I made my first brew with the new insulation this weekend, and am very happy. Drilled a hole through the lid and inserted a thermometer and it held perfectly throughout my 30 minute mash. Stirred twice.

Using WLP644 "Brett" as an ale yeast

Four days of fermentation at 68F, with the probe on the Conan container: US-05 is at 1.013 Conan is at 1.015 WLP644 is at 1.015 OG was 1.055. Bumping it to 72 for two days now, after that I'll pull it out to an ambient 70-74.

How do you insulate your kettle?

Inspired by this thread I decided to get cracking on insulating my smaller pot, 3 gal, last night. I had some styrofoam from an old home-made MT that never worked out, which was enough for about 10 layers. I'd say it's about an inch and a half thick. I put a layer of scotch tape around it all...

Using WLP644 "Brett" as an ale yeast

They are off to the races! After a top-3 worst brewday ever yesterday, I've got three bubbly beauties going. The US-05 took off first, then the Conan, and I've got some slow activity on the 644. Since I have the probe on that one - fingers crossed that it picks up during the day.

Using WLP644 "Brett" as an ale yeast

Hmm... I never do secondary. And I'm using all my 3gal fermentors for this triple-split as well, so I really can't. If it goes down to 1.009-1.010 or so, you think that's too low? How would you describe the difference to say 1.012? My objective with this batch is really two fold: I want to...

Using WLP644 "Brett" as an ale yeast

3oz split between citra, amarillo, and simcoe is exactly what I was going for in this 2.5gal recipe, dry hopped. Another 3oz during (mostly late) boil and whirlpool. I've never had to stop a fermentation... what do you do, skip directly to cold crash and then keg?

Using WLP644 "Brett" as an ale yeast

Sweet advice man, thanks. I'm torn about the fun, vigorous, fermentation of the 644 now. I have two buckets and a carboy. Only the carboy will allow me to watch it, but it also has the least head space! Put the 644 in a 1L starter on Monday, had a nice krausen last night, none this morning...

Using WLP644 "Brett" as an ale yeast

I just got this and the Conan in the mail today, and of course want to brew with them as soon as possible. Many people claim a two step starter for a total of 10-14 days is beneficiary for the 644, very nice to hear it's not strictly necessary. I'll get the starter going tonight, maybe I will be...

    Stc-1000+

I finally got around to build one of these tonight, and since I couldn't find any real confirmation that it would work with a Nano to program it, I can confirm that it worked without a hickup for me. Now, as a heat source, I went with a 500W thing with a fan in it. Was the smallest I could...
