Get an estimate from a good repair place...find out who your insurance would use.....give the lady the estimate tell her you need her to pay it by the next day....if she does pay...keep the money and buy some beer stuff....if she doesn't call your insurance it won't go up.

I know this kind of a newb ? but what is the reasoning for the low temperature secondary and the "normal" temperature primary?

i have never used a starter and have never had any problems with fermentation. (knock on wood) I have used that particular yeast many times. I would say wait another day and see what happens....

what happens if this sits in a higher temperature primary.....let's say 68-72 degrees

it called for champagne yeast....but I am not married to it so I will check out that yeast chart..... Thanks for the advice on the Pineapple...I really want it to have a dominant pineapple flavor.
