    Looks super infected, safe to drink?

    I've never had an infected beer yet, but that doesn't look like any of the infections I've seen in other threads. Either way it's safe to drink as no human pathogens can grow in beer. I would not shake the bottles though.:mug:

    Possible problem or is this normal?

    What temp did you ferment at. I beleive a high fermentation temp can cause hot alcohol flavors(fusels).

    Well you can't know for sure if your fermentation is complete without taking gravity readings. Also, that's how you would calculate your ABV.

    I also have well water that is pretty hard. I've never used anything but and my brews(not including my first 2 or 3) have all been good. I do have a sediment filter but that's it.

    Hot Liquid In The Fermenter!

    If those buckets are made from HDPE/#2 plastic, which they probably are, then that temp wouldn't be a problem at all as HDPE can withstand continous temps of around 230F. If it is LDPE then I wouldn't make this a common practice, but a few minutes at that temp shouldn't cause any harm.

    #2 plastic can handle continuous temps of 230F and up to 248F for short periods of time. Unless you're boiling in your cooler it should be fine with mash temps. In fact, based on those temps, I would say no problem dumping some boiling water in your cooler to preheat.

    That wouldn't affect your gravity. If it was an extract brew then the water and extract may not be thoroughly mixed, which would cause your reading to be off.

    Hmmm..I've only had Mad Elf once and I enjoyed it. I don't think I could drink more than 1 in a sitting though. At the price, I'd rather have some Nugget Nectar!:mug:

    One quick question about the OG of my just finished batch.

    If it was an extract brew, it's possible that the extract and top off water weren't mixed well prior to taking the reading. This is a common issue. With extract, as long as your wort volume is correct then the OG should be fine.

    Secondary for Hefeweizen?

    Personally, I wouldn't bother. Just siphon carefully into the bottling bucket when it's time. Since it's a hefe, I certainly wouldn't worry too much about clarity.

    My favorite by far is Troegs Nugget Nectar. Also Troegs Perpetual IPA and Southern Tier 2XIPA are pretty great.:mug:

    Burnt Wort?

    I once scorched some extract during boil and it added a bit of a roasty caramel flavor to that particular beer. Actually it tasted really good.

    Timing question/advice needed

    If your gravity reading is stable then it's fine to move to secondary. I've found with almost all of my brews that after 7-10 days my readings are stable. I wouldn't transfer without having a stable gravity reading for 3 days first.
