    I would always advise removing the blowoff tube after it is no longer needed and replacing it with an airlock. With a fermentation timeline of 3 months, you may want to consider a secondary vessel in which the headspace is minimized.

    Piling on here and saying thanks for the setup! Bottled an AIPA for the NHC in early March. Sat for at least a month in the bottle before judging. Beer was in good enough shape to reach the mini-BOS.

    I'll have to agree with bobbrews here. Having brewed mostly IPAs over the last year and a half, I have found that conditioning time is certainly beneficial.     Try the closed transfer from fermenter to keg as mentioned. Made a huge difference for me. Also, always cap on foam when bottling.

    You're welcome! I would get the starter going ASAP. You'll rarely be too far ahead of schedule in that regard. I'm sure you're thinking about it and I'll give you an extra push.... get/make a stirplate. Money well spent.

    Like most issues that come up here, you'll get several different responses. My recommendation FWIW is to use YeastCalc. It will give you a target based on the batch size and gravity. It also allows for up to 3 steps. The size of the step does matter because there is a sweet spot of cells/mL...

    They are usually very fast. One business day after receiving the sample. I'd recommend logging into their website as a first time user. They didn't email the results last time I sent a sample in but the results were available through their website.

    You could certainly skip this step if you'd like. However, there will still be plenty of yeast in suspension for bottle conditioning/carbing if you stick to the directions.
