    Any ideas out there for adding the caramel flavor of caramel 80-ish without adding the inherent color associated with darker caramel malts? I've tried caramel 10 with a high mash temp, and while the color was spot on, it still didn't have the more toffee-like notes I'm looking for. Not really...

    I've thought about adding honey in place of/in addition to honey malt, but I've heard it takes considerably longer to ferment? Any benefit other than sanitization for adding orange peel/zest at 10 min. as opposed to knockout? Thanks for the help! :mug:

    Bananas Foster Creamy Ale (All Grain) **pic intensive**

    Was anyone that tried this able to have anywhere near decent head retention? I brewed a similar beer recipe with 3 lbs. banana/3 gal of beer. Nice clean carbonation, but the head dissipates within 15-30 seconds. Thinking it has to do with the oils in bananas? **Also, after about 4-5 weeks in...

    Oh yeah, primed with about 4 oz. of corn sugar. Less than the 5 oz. bag that came with the kit (was aiming for something lightly carbonated :-/
