    The wort turned out to be more highly hopped than expected and due to that and time constraints I ended up just treating it as a APA. I just dry hopped it with some Citra, Mosaic and Simcoe. Turned out really good but nothing spectacular. I see you're in Cave Creek are you an ASH member?

    Years ago when I used to bottle I used those labels. I didn't have the fancy graphics because of having a mono printer but they do work great. You can get them in a variety of colors to easily identify different batches.

    I would think 85K will be more than enough. I'm redoing my system and in a moment of stupidity ordered 2 200K burners and if I were to run them wide open I'd probably melt the ball valves, sight glass and thermometers off my 10 gallon pots.

    You can't silver solder aluminum. I agree with BrunDog, there are several enclosures available that would make it safer.

    The first time I used gelatin for some reason I used an entire packet or about 10 times the amount I should have and I didn't notice any problem with foaming.

    Are you sure it's not a solid state relay (SSR) that you're looking for? It would make a lot more sense. Unless you're running off of solar panels or something similar why would you want a DC freezer?

    I saw a couple of posts about adding it to the mash so the enzyme was denatured in the boil. I think the idea was to have more control over how much conversion takes place. I don't really think it would be an issue but I thought I'd ask.

I realize it doesn't multiple like a bacterial infection but could enough remain in the nooks and crannies of a MT to cause over conversion in following batches?     YES DRY HOPPING IS DANGEROUS! DON'T EVER DO IT. YOU'LL POKE YOUR EYE OUT! Seriously, I agree with the above posts. Forget the secondary & use pellet hops. I used to do it the way you are and it's a waste of time not to mention some of the beers I made with whole hops had off flavors probably...
