    Dry Yeast after Kettle Souring?

    I have never pitched dry yeast into sour wort like that. But I have repicthed onto the same yeast cake twice kettle soured beers. Go three beers off the same cake. One of those brews had repitched lacto on it. I feel like you would have nothing to loose by rehydrating.

    South East Gulf Coast Texas. I am using what I believe the Eroupeans call it. I used Voss Kveik and my so far go to Farmhouse recipe, did a hop tea instead due to not boiling it.

    What I did for beer today

    Pitched Yeast on yesterdays Pre Prohibition Porter brew this morning. Watched some BrewTube, edited some videos for my own channel. Trying to plan out all of the next few brews, Thinking Stout tomorrow. Split test batch of Berliner worth to test Lacto during the week or next weekend.

    What is your cutoff time of day to start brewing?

    Between kids and everything I try to get everything together the night or so before. Also brewing in the bag, no chilling and few other things I can brew nearly anytime. But I normally try to be at mash in during sunrise.
