It might be boring sounding, but my favorite is colombus cascade. Nice and simple, heavy on the cascade late. If I'm feeling adventurous, I'll throw some citra in with the cascade dry hop.

I have a colonna capper and I love it. I really don['t have much to compare it to, the only other capper that I've used is a wing capper, but I've never had a problem capping and corking with the colonna.

No problem. Any recipe you can find is probably good, I use oranges, cloves, cinnamon sticks, and sometimes nutmeg or allspice. Just make sure you don't boil it, and serve it nice and hot. It's one of my favorite things in the winter.

I wonder which hops are used. The ingredients lists cluster and "hopburst hop blend".

I make gluhwein out of it then I have nice fermenters for test batches and 1 gallon batches of wine.

Wow, that harsch crock looks amazing. It's a shame I didn't know about that in time for Christmas. I pretty much stick to sauerkraut and Kim Chi, but I would love to try fermenting other foods.

Stainless steel has more chromium (the element that makes stainless steel "stainless steel") than carbon steel. That's about the only difference. I don't think carbon steel will hurt your brew, especially for that short period of time.
