Need help picking an all in one system

These systems have been around for a few years and are legit. It would certainly fill your needs. Search for Unibrau and you'll get feedback from owners.

    Underpitching Hefeweizens

The idea is more/stronger esters from the lower pitch. The clove/banana balance is more fermentation temp related, I believe.

    Rust on kettle normal?

Give it a good scrub with Barkeeper's Friend. That should take care of it, but if it doesn't call NB customer service.

Looking for a more free flowing bag....

I would recommend the BIAB false bottom from Brewhardware. I have a recirculating system with a wilserbag and this bottom and it works great. I usually fish out the false bottom before the boil but not always.

    Grainfather!!

Good points, and I totally agree with you @TexasWine! I have both a recirculating E-BIAB system and a Grainfather, and overall I prefer the E-BIAB. I have been thinking of selling off the Grainfather, but I have been holding off because I wanted to try it with the new controller. After the last...

I vote for wiring up a panel next. How to crimp, dealing with 2 wires at one terminal, wire routing, etc.
