    I don't mean to hijack, but I have a related issue with an oatmeal stout. My 5.5 gal AG recipe included 14.25lb of pale, 2.2lb of roasted, 1lb of chocolate, 1lb of flaked oats, and 2.2lb of malted wheat. The SG was 1.080 and I pitched double dose of White Lab's Dry English Ale yeast (WLP0007)...

    That's the yeast settling out of the liquid. Quit turning it upside down. 😊 It's perfectly normal for bottle conditioned brews, but you want it to settle out. That way, it stays mostly put in the bottom of the bottle if you pour carefully. Either way, it's just yeast and won't hurt you.

    Well, I've got fuzzy rice. I there a bad mold color? Mine is definitely white and fuzzy, which I assume is koji. There are also grayish mold spots concentrated where the yeast is visible. Normal? Smells good, so it probably is good.

    Are you sure you're reading the right scale on the hydrometer? Pls post your recipe. The yeast will be fine. You just want to get the wort up into the optimum temp range for your strain.

    I love bottling

    I'm giving that a try during my next bottling session. I agree with most that bottling is kind of relaxing to me. It's mindless, but productive. It also lets me see all that great beer I'll be enjoying and sharing in the near future.

    You can look on either the Wyeast or White Labs website. They both have good info to help guide your selection.
