    Moving secodary/gravity readings

To use a secondary, or not? That's one of those topics people can argue about incessantly. I would agree with the previous poster that it's not a necessary step, especially for a beginner. Plenty of good beers use only a primary and you can definitely just let yours finishing as is...

    Fermentation Stopped Early?

The reading in your picture is 1.016. The hydrometer only shows the last two digits as the 1.0xx is implied or understood. You are likely done with a 1.014 reading. Just take a second reading a day or two later to see if there's a decrease (meaning that fermentation is still going slowly)...

    Fermentation Stopped Early?

Something is askew with your readings. Is that a typo or are you perhaps looking at the wrong scale on your hydrometer?

    Moving secodary/gravity readings

I'd recommend moving your brew into a sanitized secondary container while it's still fermenting. I usually do so once the airlock activity has slowed down considerably. That way, your brew is still producing CO2 to displace the air in the remaining headspace. Just minimize splashing when...

    Carboy Question

Very true. I usually only use carboys for secondaries. I do have a few larger (6 gal) carboys for primary use, as well as for wine, mead, and ciders. The 5 gal carboys are strictly for a secondary or lagering. Then, I have a few 3 and 2.5 gal carboys for smaller batches. Some people don't...

    Carboy Question

Plenty of folks use plastic carboys. I think it's simply a matter of personal preference. Plastic is certainly lighter and less fragile (and cheaper?). I prefer the glass carboys though.

Making Traditional rice Wine. Cheap, Fun, and Different

Mine definitely went through an acetone smelling phase. It seems to have passed and the fermentation has really taken off. Smells a little sweeter (and not so flammable) now!

    First AG tomorrow, excited/nervous

It's a matter of trial and error until you figure out how efficient your system is at extracting the sugars. I planned on 60% efficiency for the first few batches, but have now learned my system runs about 70-75%. Also a good idea to boil a gallon of water and dump it into the mash tun to...
