    Latching and unlatching dpdt relays

    That Works. You could also use a multiple throw switch and two relays... I can diagram it from home if you want. Phone isn't ideal for this. Basically a take a switch with 3 throws. Wire 1 to the first relay that has however many poles you need and the 2nd to the second relay etc...

    Did you look on digikey etc? I think generally now 120V etc is not used in control panels. It is all done with low voltage and low current using relays.

    Sorry... yes.... should have made that clear. I am using treated city water. If you are using a well I would treat with chlorine, UV, filter, etc.

    I suppose it depends where you live, but my water is pretty clean here. I filter it through a very fine carbon filter. Under CO2 pressure you basically only need to worry about anaerobic bacteria. Aerobic can't survive without O2. At those temperatures things also grow slowly. To each...

    Should be fine... It is under CO2 pressure so basically most bacteria wouldn't grow anyways. Anaerobic bacteria in theory could grow in the CO2 environment, but if you clean and sanitize your kegs I can't imagine much could grow in there.

    Part of the problem is I keep having little leaks with the kegs. Basically since I am flowing water into the gas in... the little leak causes the tank to completely fill with liquid and eventually start leaking water. I have pressure tested them and haven't been able to trace the leak...

    Anyone ever constructed one? I was looking to build one using a thermoelectric cooler. Basically I want to run my seltzer tap using it instead of using a keg in my fridge. Any experience with them?... should I build/buy?... any advice helpful. Thanks all.

    Sorry... It won't really work. The problem is that the air isn't sufficient for keeping the plate cold. You really need an ice bank.
