    How quickly does an infection spread acros the surface?

    Did you use whole leaf hops? I've had seeds float to the top. They were white and covered with yeast. Freaked me out too. But it was just hop seeds. I've thought about trying to get some whole leaf citra to look for seeds. It would be awesome to get a plant going.

    Do the spots look fuzzy? May be mold if so. I'd bottle it and see how it tastes after a few weeks. You'll know right away if it went bad. A guy in my homebrew club brewed a batch that went bad. There was no denying it from the second you smelled and tasted it. It was sour as could be.

    Updating: I've had two people tell me this is the best beer I have ever brewed. They are probably right. This is a fantastic recipe. Haven't brewed a batch with S-04 yet, but I'll update when I do.

    Brewed this up yesterday. Used mosaic hops in place of the amarillos. OG was 1.063. Right at 5 gallons into the fermenter. Did a 90 minute mash because my temp was about 148.     I'd say at most you would have 5.5 gallons at the end of 90 minutes. Sounds like a good thing to me. If you added at 60 and 5, no change in IBU's.

    A spigot and thermometer on the kettle are nice. Not necessary, but nice. Are you batch sparging? You probably need around 5 gallons of sparge water. Your recipe says 7 gallons total with 1.4 gallons absorbed by the grains. That would only leave 5.6 in the kettle, not 6.6. How are you boiling...

    Let us know how the batches come out. I've read Wild Fermentation and have wanted to try a wild fermented mead since reading it. But I can't get past the thought of wasting precious honey if it comes out bad. Especially when dry yeast is so cheap. Hope the wild ferment comes out good for you.

    Wyeast 3068 Not Responding

    That is exactly what I thought when I saw that picture. I had something similar happen to me with Safale US-04. The problem was me. I didn't get the lid on the bucket good enough. Lifted the lid and immediately saw signs of fermentation. Got the lid on better and the air lock started popping away.
