    Sense of taste has so much to do with smell that naturally you may perceive the banana taste.. In my experience the flavor isn't quite as "strong" as the scent.. and the esters may fade with time.

    It's 5.75 pounds empty.. I know it's a lot more than a milk crate or cardboard box.. But for wood its not that heavy, and I really wanted to try the pyrography. The total weight is something I thought about, which is why I sized it for 12 not 24 bottles. Easy enough for me to carry around.

    I made an English Pub Ale using the same yeast.. hard to tell from the pic but mine ended up looking the same... floating, spotty yeast rafts. Turned out great. :mug:

    Off flavor, result of high fermentation temp?

    The warmer fermentation temps *could* have lead to ester production. Esters can described as banana-ish. Esterification can be favorable in some styles. Could possibly be due to underpitching that particular yeast strain, or a combo of both. So it's not an "end of the world" kinda thing...
